Ostuni: visit of the hypogean mill with tasting of olive oil

It is oil, the gold of Puglia, ancient and precious food like the land from which it is generated and of great work and dedication by those who, with love and respect, cultivate and care for our olive trees, authentic monuments of nature . Every drop of oil is precious and contains in itself a whole world of knowledge and unique and inimitable flavors. The first fossil finds of this plant date back to about a millennium ago, sung by the ancient poets. Legend has it that it was Athena who planted the first olive tree and that from its fruits the men obtained a very precious and useful juice of the oldest plants of our territory: 3000 year old olive trees, registered in the last years by the Puglia Region, millenary monuments of nature with fascinating sculptural forms, unique in the world and of rare beauty that surround the ancient hypogeum oil mill of the Roman era (one of the oldest in Puglia).
We will finish the course with a blind tasting of three organic extra virgin olive oils on dry frisellines telling the production of green gold and its properties and benefits, which make it "the gold" par excellence!
