Ostuni: production workshop of the Apulian mozzarella

The cow's mozzarella is also called "fior di latte" and, in Italy, it is produced mainly in Campania, Puglia, Calabria, Basilicata, southern Lazio, Abruzzo and Molise.
Food with a delicate flavor, very appreciated by young and old, it is produced in an ancient farmhouse of the late '800, specialized in the production of wine as well as wheat, vegetables and legumes, with its old stables that still today host cows, goats and sheep . We will learn how to make this tasty morsel: the milk brought to high temperatures gives the curd that turns into a tasty gem for the senses. In fact, we will taste the mozzarella which is still warm and rich in freshly produced milk.

A curiosity: it takes ten liters of milk to produce one kilo of mozzarella.
At the end of the workshop it is possible to taste this little treasure accompanied by a taste of extra virgin olive oil from organic production and our centuries-old olive trees, together with appetizing Apulian specialties. A guided tour of the ancient masseria is also included
